The soul of a spicy Daiquiri, with warm, earthy notes of cumin, reminiscent of a good Cuban dish. Subtly lifted by coriander, this combination of flavours creates a taste experience in which the sweetness of the pineapple is enhanced by aromatic spices that add depth and complexity to every sip. "Spicy, gourmet, exotic".

METHOD

Add ingredients into shaker with ice, shake and fine strain. Garnish with dehydrated roasted pineapple.

  • 50ml Ron Santiago de Cuba 11 Years Old infused with Coriander
  • 20ml Roasted Pineapple Syrup with Cumin
  • 20ml Lime Juice
  • 5ml Caribbean Pineapple Liqueur
  • Coupette
  • Pineapple and Cumin Tuile
THE CREATOR SAYS

"This Daiquiri is an ode to Cuban cuisine. By using pineapple and cumin, I wanted to bring out the tropical, savoury side of a dish. Inspired by the classic Pollo con Pina or Pina Rellena, I tried to accompany the pineapple with these aromatic spices that are so common in local cuisine, to create a unique daiquiri that would transport us to the Caribbean."
