Sweet, sour and herbal notes pair perfectly with the main ingredient of our cocktail, Ron Santiago de Cuba 11yo, and elevate its nice woody, tannic texture and its dried fruit and spicy flavours.

METHOD

Add ingredients into shaker with ice, shake and fine strain.

  • 50ml Ron Santiago de Cuba 11 Years Old
  • 20ml Green Peas Cordial
  • 10ml Verjus

"Peajito is a cocktail where the sweet kick is obtained by using a homemade pea pod syrup. Normally, pods would be discarded, but we found a way to extract sweet and herbal notes. The sour part is obtained by using Verjus, and those fruity sour notes add complexity and freshness to the drink."
